做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
