做(zuò )法(fǎ ):春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再(zài )加入生抽(chōu )、老(lǎo )抽、蚝油翻炒(chǎo )均(jun1 )匀(yún ),加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上锅盖焖。
