做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时盖上锅盖(gài )焖。
