做法:春笋切(qiē )成片(piàn )后(hòu )加(jiā )少许(xǔ )盐(yán )捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
