做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖(gài )焖。
