做法:春(chūn )笋切成片(piàn )后加(jiā )少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖(gài )上锅盖(gài )焖。
