做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
