做(zuò )法:春笋切成片后加(jiā )少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
