做法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖(gài )上(shàng )锅盖(gài )大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅(guō )盖焖。
