做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
