做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
