做法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
