做(zuò )法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
