做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
