做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖(gài )上锅盖焖。
