做(zuò )法:春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞(lāo )出(chū )后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
