做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅(guō )盖焖。
