做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
