做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到(dào )水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
