做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖(mèn )。
