做法(fǎ ):春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
