做法:春笋(sǔn )切(qiē )成片(piàn )后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
