做法:春笋切成(chéng )片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快(kuài )熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
