做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
