做法:春笋(sǔn )切成片后加少许盐(yán )捞出后(hòu )用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖上锅盖焖。
