做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
