做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
