做(zuò )法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
