做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
