做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
