做(zuò )法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
