做法:春(chūn )笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖(gài )焖。
