做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
