做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
