做法(fǎ ):春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡(pào ),生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
