做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
