做法(fǎ ):春笋(sǔn )切成片(piàn )后加少许盐捞(lāo )出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
