做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
