做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放(fàng )入(rù )生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
