做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加(jiā )入盐(yán ),翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
