做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
