做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
