做法(fǎ ):春笋(sǔn )切成(chéng )片(piàn )后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
