做(zuò )法:春笋切成片(piàn )后加(jiā )少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
