做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬干(gàn )的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
