做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开(kāi )后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
