做(zuò )法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
