做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
