做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
