做法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少(shǎo )量清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
